The «organic» designation covers all estates certified as using organic methods, as verified by one of the bodies approved by the Ministry of Agriculture, such as Ecocert. This designation applies to recent vintages. All wines produced by biodynamic methods are also certified as organic. The «biodynamic» designation is used for all estates certified as using biodynamic methods, as verified by one of the two official bodies, Demeter or Biodyvin. The «Growing/vinification type» designation covers certified wines produced by biodynamic or organic methods, sustainably produced wines, and «environmentally friendly» wines that are not officially certified. The palate is lent elegance by its perfectly tannic, persistent balance. It has an intense deep red colour, with powerful notes of jammy black berries, tobacco, spices, liqueur and cocoa. The wine is then fermented in barrels for a year before being aged in bottles for two years. This wine is a blend of Bordeaux varieties (Merlot, Cabernet Sauvignon and Cabernet Franc) which are macerated for 15 days in a thermoregulated stainless steel tank. Since 1998, the domaine has benefitted from consultancy provided by oenologist and agronomist Riccardo Cotarella. They produce approximately 200,000 bottles per year. Today, their vines span 30 hectares in five different appellations. Since then, they have striven tirelessly to create perfectly balanced wines blending innovation with tradition.
